Crushed Crouton Chicken

I bought a bag of Croutons (Chatham Village) and I put them into a large ziplock bag and crushed them with a rolling pin.

I then used Italian Dressing (Kraft Good Seasons) and I soaked raw chicken in the dressing in a bag overnight. The next day I grabbed the soaked chicken and rolled it in the smashed croutons and saved a few for later. I baked the chicken in the oven at 350 degrees to about 37 mins total.

Once it came out of the oven I added a few more croutons on top for extra “crunchies” as we say in our house.

I made green beans with it and mashed potatoes.

I love mashed potatoes; here’s my go to recipe.

Bring the water to a boil and when the potatoes are soft drain them in a colander, once you put them back in the pot I like to first add warm butter (it melts into the potatoes) and then I add fresh garlic (we have a garlic press so it’s teeny tiny) and then salt, pepper, ground mustard, paprika, sour cream and a little bit of milk and mix. It’s delicious and everyone loves it.

Green beans are super easy, steam them and when they’re done I usually add a little lemon juice that is added to melted butter and a little salt.
